Recipe of the Week: Sausage & Ravioli Lasagna

This past week I attended the Tennessee State Master Gardener Conference in Kingsport and afterwards took a few days to drive through the mountains of Virginia and Kentucky. And although this wasn’t planned, we also took a little day trip to Roan Mountain, N.C., and was surprised to find that the rhododendrons were just beginning to bloom. I’ll share some pictures next week. So, after a grueling week of gazing at mountains tops, I am reluctantly getting back into the swing of things.

I’m so glad to hear that this year’s Relay for Life once more dodged the rain bullet (although we certainly needed the rain) and was well attended. I know everyone there had a great time and lots of money was raised. If hope you didn’t miss it like I did. I heard the comment yesterday that more attention should be given to educating the general public about what goes on at the event. Relay is not just for team members and organizers; it’s a community celebration. With all sorts of food available and entertainment and special recognitions and so much fellowship among neighbors, there’s something for everyone and everyone is welcome. I hope over the next few weeks someone will send me pictures to share with you.

I want to tell you about a couple of upcoming events. One is the Exchange Club 4th of July BBQ Butt Sale. Order a fully-cooked 8 lb. butt for $25. Learn more here.

The other is a seminar presented by the hospital on Summertime First Aid. The speaker will be Carol Malone RN, and a light meal will be served at 5:30 p.m., Thursday, June 28. Reservations are needed, so call 772-8475 to reserve your spot. She will discuss everything from bug bites to near drowning, so hurry and call to be sure you get a seat.

I need more recipes. How about ice cream? Anyone have a good ice cream recipe? E-mail me.
