The bean recipe readily converts to a hearty vegetarian dish by substituting vegetarian pork and beans and omitting the pepperoni (or smoked sausage).

Sensational Baked Beans for a Big Bunch

From the Kitchen of Patsy Hardister

Brownsville, Tennessee

 

2 tablespoons butter, melted

1 large onion, chopped

1 large green bell pepper, chopped

1O cans of pork and beans (15 oz. size)

1 18 oz. bottle of barbeque sauce with honey

1 24 oz. bottle of ketchup

½ cup Tennessee Gold

½ cup maple syrup

1 cup brown sugar

3 tablespoons Worcestershire Sauce

1 8 oz. package of pepperoni or 8 oz. of thinly sliced smoked sausage

Preheat oven to 375 degrees. Sauté onion and bell pepper in melted butter.   In a very large bowl, mix the remaining ingredients thoroughly and add the onion-pepper mixture. Place into an ovenproof container. This will completely fill a deep 7-quart oval baker. Cover the top thoroughly with pepperoni. Bake uncovered for 45 minutes. Remove from the oven and stir. Once again cover the top with pepperoni and return for baking about 55 more minutes. These beans are delicious served hot or stored in the refrigerator and served cold.
