Baked Dove

From the kitchen of John Gallaspy

 

1 Large Onion

12 dove breasts

Worcestershire sauce

Garlic powder

Salt and pepper

Butter

5 or 6 Slices bacon

White rice

 

Preheat oven to 350 degrees.  Slice onion and cover the bottom of a casserole dish (one with a cover) with sliced onion (save one slice). Place dove breasts on top of onion slices and sprinkle Worcestershire sauce generously over dove. Dust with garlic powder, salt and pepper.  Add the last slice of the onion, broken into the rings, on top and place one pat of butter on each dove breast.  Place bacon slices on top and cover.  Bake for 45 minutes and start your white rice after about 30 minutes into cooking.  After 45 minutes, remove cover and bake for another 15 minutes. Cover plates with white rice, add the dove, bacon and onions on top and use the drippings as gravy.  Serves 4.
