Tomato
and Spinach Toss

Kitchen of Christie Bradshaw
7 oz. package
penne pasta, uncooked
½ lb. hot or
mild Italian Sausage, casings removed
6 oz. package
baby spinach leaves
1 - 14 ½ oz
can diced tomatoes with basil, garlic, and oregano, undrained
1 cup shredded
low moisture part skim mozzarella cheese
2 Tbsp. grated
parmesan cheese
Cook pasta as
directed on package. Meanwhile, crumble sausage in a large skillet and cook on
medium high heat until cooked through, and drain. Add spinach, and tomatoes,
and cook 2 minutes or until spinach is wilted. Remove from heat, and add
drained pasta, as well as the cheeses and mix lightly.
